A recipe does not need to reach an oil's smoke point to cook well. If the oil starts smoking

Turn down or remove the pan from the heat, move it away from the burner and ventilate the room. Do not add water to hot oil. Once an oil has been overheated, judge it by the product's safety guidance rather than trying to rescue it with a new smoke-point claim.

Smoke is a warning to change the cooking conditions; it is not a reliable home purity test. A clean-looking oil can still be old, and a strongly aromatic oil is not automatically unsuitable for cooking.
